Happy Friday! When I was a kid, we would get pizza and a movie on Friday nights (because Mom had her group thing so Dad was in charge of us. WILD REVELS!!!). So now I am thinking about pizza. And I feel there are MANY questions we all can/should discuss.
Naan Pizza
Is this just a thing in American frozen food aisles? Or has it made it’s way to India as well? Also, is it a heartwarming example of melting pot culture and Indian-Americanness, or a strange cash grab by food manufactorers?

Thin crust, thick crust, deep, or square? What’s your preference?
The classic famous Chicago Style pizza is “deep dish”. Which is truly a Pizza Pie, the crust goes up the sides of a deep pan, and it is filled with ricotta type cheese and veggies and sausages and other toppings, and then chunky tomato sauce on top. It takes like half an hour to cook fully. It’s fine, but honestly it’s not my favorite.

The other Chicago style that IS my favorite is thin crust, sauce, cheese, toppings, and cut into little squares. Somehow it tastes better in squares.

More Cheese, Less Cheese, Middle Cheese?
I am boring and go for Middle Cheese. I don’t want extra, like I don’t want it bubbling up and over the edges, but I also don’t want the sort of delicate scattered on top cheese, I want a full coating.

Favorite Topping Combo?
When I was a kid, I always thought my Mom’s favorite pizza was weird, and now I’ve grown up and it’s my favorite too. Bacon and Onion! It sounds strange, but it’s delicious. And of course I also have a soft spot for my namesake pizza, “Margarita” (even though it breaks my cheese rules).

Everybody gets excited about toppings, but crust is the real test of a pizza. I like thin, but is has to be crisp and yeasty, but not cracker-like. And the foldy, New York style is just wet cardboard.
Of course, the square-cut is best. If you go on line and search “square versus triangular pizza cut,” be ready for a hot debate.

Well leavened thin crust + good, not sour tomato sauce (really sour sauces are the worst of the worst and ruin everything). I’m lactose intolerant so need pizzas with a lot of things on the top to compensate the lack of cheese.
My fav toppings are: rucola, crudo and parmesan pieces or Tuna and onion.
